SERVING RIVIERA SOFT-DRINKS

 

If the dispense guns & box connectors are not cleaned regularly then this will affect the amount of syrup dispensed and ultimately this will impact the quality of the finished drink.

Prior to the start of each shift please pull a couple of pints of soda through the system on each gun. This triggers fresh carbonation for the first pour.

NEVER touch ‘brix screws’ under the bar – unless directed to in an emergency by one of our team. These are sensitive & only trained engineers will be able to accurately re-set with the correct calibration equipment.

 

HOW TO CLEAN THE DISPENSE EQUIPMENT

 

Regular cleaning of the equipment is vitally important as any build-up of sticky syrup on the guns can block the holes through which syrup is dispensed. This will then effect the ratio of syrup to water & therefore taste / carbonation.

We recommend you follow the below procedure.

  1. Remove the black nozzle from the dispense gun.
  2. Place the gun and the nozzle into a jug of warm water.
  3. Leave for at least 2 hours or preferably overnight.
  4. Wipe gun with a clean dry cloth ensuring any excess residue is removed. Also clean the hose & cellar connectors with warm water.
  5. Never use any solvents or detergents.
  6. Pull through a small amount of product.

 

RESOLVING A TECHNICAL ISSUE

 

Occasionally you may have a problem with your dispense equipment, but there are some very basic checks that can be carried out prior to calling for an engineer to attend.

 

NOTHING BEING DISPENSED

  1. Is the Bag-in-Box empty and in need of replacing?
  2. Are the Bag-in-Box connectors firmly located & double clicked?
  3. Is the CO2 bottle full and turned on – reading 75lbs psi / 5 Bar?
  4. Is there water to the system or has this been turned off?
  5. Is the cellar system all powered on?

 

SYRUP ONLY BEING DISPENSED

  1. Has the water to the system been turned off?
  2. Is there a red light flashing on the carbonator? If so, switch off and remove plug from socket. Plug back in and the unit will re-set.
  3. Is the cellar equipment all turned on?

 

WATER ONLY BEING DISPENSED

  1. Is the box connector firmly double-clicked? Does the Bag-in-Box need replacing?
  2. Is the CO2 bottle full and turned on?
  3. Is the cellar equipment turned on? Still water will dispense even if the cellar is not powered on.


 

THE DRINK IS FLAT / WARM

  1. Is the cooler turned on and the water inside icy cold?
  2. Is the CO2 bottle full and turned on?
  3. Is the carbonator turned on?
  4. Reset the carbonator by switching off and then back on, then purge the carbonator by lifting the red lever on top of the cylinder for a couple of seconds. Pull through soda.
  5. Does the glassware need renovating?
  6. Has the cooler ever been switched off? It shouldn’t be as it will take 2+ hours to chill down again. Warm water prevents full carbonation.


 

THE DRINK IS WEAK

  1. Does the Bag-in-Box need replacing? (less obvious for lemonade / tonic)
  2. Has the Bag-in-Box connector been firmly double clicked?
  3. Is the pipe from the Bag-in-Box connector twisted?
  4. Is the correct Bag-in-Box connected to the correct line?


 

THE SYSTEM IS USING TO MUCH GAS

  1. Check the washer between the gas bottle and regulator has not been lost or has not perished?
  2. Check there are no empty Bag-in-Box’s on the system and ALL connectors have a Bag-in-Box connected.
  3. Check the gas-lines aren’t twisted / kinked.


 

COOLER NOT WORKING

  1. Is the cooler plugged in and switched on?
  2. Has the fuse/breaker on the main distribution board tripped out?
  3. Has the fuse in the plug blown?

 

ORANGE JUICE – A SPECIAL NOTE

 

Riviera Orange Juice has a high juice content, it therefore needs to be treated differently from our other products;

  1. Shelf life unopened is 4 months from production.
  2. Once the OJ is connected to the system it needs to be used within 21 days. Please record each connection date on each box as appropriate.
  3. Take extra care cleaning guns & connectors when serving OJ.
